As the story has it, one day I headed to the opposite side of the globe – the Flipside. I arrived in Korea February 16th, 2005 and thought I’d do a year, then leave. I was wrong. I stayed, launched my first company, Flipside Fitness, and then opened Korea's largest boxing club, Hulk's Boxing (now called Hulk's Club).

After 11.5yrs in Korea, I then picked up one day and returned to Toronto, Canada. But then I left again.

Now I live in the Philippines where I am the CEO and head coach of Empowered Clubhouse, the Philippines' first and only boxing clubhouse exclusively just for women. I also am the founder of the Lil' Sistas Project, CEO and designer of Slay Gear and Baa Baa Black Sheep .Ph.

Highlights of my Day... Tuesday, October 27

1. I hibernated inside my warm home today literally did not even so much stick my head out the door. I left Snickers in charge of Mi Nam, the recycling and the garbage, and stayed inside to do a whopper-of-a-load of marking. Today was all about finishing midterm exam marking and notebook marking, and so I didn’t even so much as shower. I did, however, brush my teeth. I’m not that barbaric.

2. I slaved away at marking while Snickers acted as my assistant. He entered the marks into the marking sheets, insisted I take occasional breaks for massages, made me coffee, and he even served me dinner.

4. Just after dinner time, Snickers suddenly got all giddy. He ran into the family room and then returned with his fists behind his back. “I have something for you – something I know you want—something I know you need. I love you” and with that I bit my lip and hesitated on what to say.

5. Got proposed to today… a proposal for chap stick that is.

6. With all the proposal and wedding talk that’s been flooding out from out mouths and filled up our ears, joking around and proposing a mock proposal wasn’t exactly funny to me tonight, nor will it ever be. So when he pulled out chap stick from behind his back I was not impressed. Sure my lips were dry and yes, I did need chap stick but he thought he'd tease me. I grabbed the chap stick, threw it at the bathroom door and then covered my face with embarrassment. The one side of me was relieved that it wasn’t another brutal proposal like my other two but the other side of me had hyped myself up for it.

7. It’s times like this, when I have a ton of marking to do, that I feel like I’m a university student all over again, and I hate it. It definitely feels like I’ve been putting more effort into this midterm with making it, printing it out, and marking it than my students did with studying for it. I sure hope that’s not the case but I can’t help but feel like it is. These late nights of marking are killing me and are definitely discouraging.

8. I take that back. It’s not the midterms that have been eating up my time but the marking of the writing student’s notebooks that have been. I have five writing classes this semester, one of which is a level two, and so they definitely have loaded me down with a lot of marking.

9. In between marking this notebook and that notebook, I found myself constantly wondering to the kitchen. I’ve never been a stress-eater but instead consider myself to eat out of boredom. Mind ya, I promised myself that for every thing I put in my mouth that I’d drink a cup of water before I ate anything. And let me just tell you this, I definitely got my day’s supply of water today… hahaha.

4. 10 ice cream
5. 14 coffee
6. 40 bananas
7. 40 frozen yogurt
8. 12 protein slushies
9. 20 frozen persimmons

1. frozen yogurt
2. frozen persimmons
3. frozen “monkey” bananas

5. rice cakes with a bit of peanut butter
6. protein slushies
7. mixed nuts
8. homemade granola bars
9. yogurt smoothies
10. coffee with a little dash of milk

My Top Ten favorite Healthy Meals:
1. protein-packed banana pancake
2. tuna-cesaer salad
3. chicken in oatmeal
4. grilled tomatoes
5. salmon steak
6. chicken wraps
7. yogurt with nut-mix and flax seed oil
8. chicken salad
9. chicken-veggie stir fry
10. beef stir fry

My Top Ten Sinful Snacks:
1. ice cream
2. ice cream
3. ice cream!!!
4. Alis crackers
5. baked bread goodies
6. peanut butter
7. Coffee Bean’s French vanilla latte
8. frozen cookies
9. sausages
10. milk-popsciles
10. I can’t say I ate bad though, considering the eating habits of many I know. I don’t eat bad but I eat a lot. I justify it with the fact that my life is very active. I weight train in the mornings, box in the evening, play outside with Mi Nam about twice a day, and then walk around a classroom teaching for about 4 hours a day. I think my love of crackers are what’s holding me back from my 6-pack though. Damn those crackers taste so good but at about 200-some calories a pack (a pack holds 6 crackers), they’re not exactly a healthy snack.

what are these "Alis crackers" and where in Korea can you find em?

Hi Anonymous,
Sorry, they're actually called Ace crackers. They come in a blue/purple box and can be found just about any where. They're high in carbs, aren't all crackers though, but because you can buy them in boxes that have them individually packed in small stacks of 6 I love them.
