As the story has it, one day I headed to the opposite side of the globe – the Flipside. I arrived in Korea February 16th, 2005 and thought I’d do a year, then leave. I was wrong. I stayed, launched my first company, Flipside Fitness, and then opened Korea's largest boxing club, Hulk's Boxing (now called Hulk's Club).

After 11.5yrs in Korea, I then picked up one day and returned to Toronto, Canada. But then I left again.

Now I live in the Philippines where I am the CEO and head coach of Empowered Clubhouse, the Philippines' first and only boxing clubhouse exclusively just for women. I also am the founder of the Lil' Sistas Project, CEO and designer of Slay Gear and Baa Baa Black Sheep .Ph.

Highlights of my Day... Friday, April 30

1. Had my morning language meeting and yes, I am getting paid – legally that is now.

2. Was asked to manage the boxing club today and, seeing as Snickers quit his job (still, good for him on that), off to the boxing club both Snickers and I went. We were scheduled to be there from 10am to 5pm.

3. With a whole day ahead of us and no one but us in the club, boredom hit pretty early and we got a bit stir-crazy with it being so chilly in the club.

4. Had this great idea to make a video at the club seeing as we had way too much time on our hands and a club full of trouble we could get into. However, I did take some video but discovered that I have no kind of editing program on my new laptop to make anything of it.

5. ANYONE KNOW OF A GOOD FREE VIDEO EDITING PROGRAM?!!!

6. I tried to teach Snickers how to do a front handspring, despite not being so successful at it myself that is. He was all too eager to try and, even after he literally fell flat on his back, he got up and eagerly tried a second time. Watching him do this not once but twice left me both hysterically laughing and thinking I was going to cry. His back hitting the hard cold ground made quite the loud sound and I knew it had to hurt. He laughed though but did note that it hurt… a lot.

7. As for the rest of our day, after we left the boxing club we went home, showered, and then we headed out to see “Iron Man 2”. Snickers has been wanting to see this flick ever since he caught word that they’d be making a sequel. It was worth the wait too. Not my ideal movie but it was definitely cool.

8. Checked out a new local hot spot, a little bar tucked away on one of the side streets. We were attracted to it because of it’s modern design and massive front window. It was super cozy inside but I didn’t care much for overly smoky atmosphere. We stayed there just long enough to eat some chicken and salad, and save our lungs from giving out on us.

9. As for the rest of the evening, what little was left of it, Snickers headed out to see some long-time-no-see friends from back in the day while I stayed home and studied Korean. I knew he’d be having a couple of drinks with his friends but he assured me that they were meeting downtown and he would only have a little. I watched him walk out the door and down the street and as much as I hate drinking guys, I knew I had to trust Snickers on this and not push things with him. He very rarely drinks but it drives me bonkers on how big of a drinking society Korea is; it’s like they can’t get together with friends or even so much do business without drinking.

10. Tough love, that’s definitely what I’d call the love I have for Snickers. Tonight my tough love was at it’s fullest, it’s toughest, and this all came about when Snickers arrived home around 2:30am. I really don’t want to get into it again right now but instead will right about it in the next couple of days.

Highlights of my Day... Thursday, April 29

1. Met up with my language group in the morning and was greeted by my curious members all eager to ask me “Where were you yesterday?” Felt nice to be missed.

2. What feels even nicer is knowing that my beautiful husband is waiting outside for me. Snickers drove me work today and stuck around so that he could drive me home – isn’t that just so sweet?!!!

3. My days of being home and alone are on temporary leave on account that Snickers’ boss wants him to work full time, meaning that he’d work from 7:30am to 7:30pm. 7pm is boxing time for both Snickers and I, it’s a sacred time in our day (hahaha), so Snickers confidently refused the offer and quit. Yup, he quit his job – good for him. That job was sending him home every day with aches and pains, and not enough money to make up for such pains.

4. Daejon Immigration called Snickers today and Snickers said we had to head out there a.s.a.p. My initial thought was something was wrong, after all, why would we need a second interview?! Snickers definitely didn’t help by sporting a concerned look on his face; he’s almost never serious.

5. An hour or so later we showed up at Daejon. I nervously took a number and waited for them to call us. Snickers, on the other hand, went straight up to the immigration officer and started talking. He kept on turning back to look at me, so I really didn’t know what to think.

6. GOT MY F2 VISA!!!

7. Turns out me being told to come for yet another interview was a big hoax and that phone call Snickers had received earlier on today was then telling him to come pick it up. I screamed with excitement in the immigration office but then made sure to give him a good punch to the shoulder upon hearing that he had kept it a secret for almost an hour and a half.

8. With a F2 visa in my hand, a grin from ear-to-ear, a handsome hubby by my side, and absolutely nothing on my schedule today except for boxing, we decided to hit up Costco. Today’s visit marked our second visit in less than a week. We didn’t exactly go to town again on goodies but instead picked up some random things for us and granola bars for a former coworker. We decided to order lunch from Costco but I guess I should have been more specific when I told Snickers to buy pizza. He returned to our table with a large size cooked pizza, of which I could barely scarf down one slice!!!

9. Resumed our usual afternoon nap time and then woke up for boxing. Tonight marked Panty Boy Jr.’s last training session before his weigh-in tomorrow, so he was definitely under the pressure and Junior Mint was obviously sporting stress. It was nice to see Black Skinny back out at training; I think him showing up today helped take the pressure and focus off Panty Boy Jr.

10. Little Miss was also at boxing tonight and she was wearing quite a face full of make-up to which Snickers gave her a dirty look and talking to. He pulled me into the conversation by asking me what I thought of her wearing make-up at such an early age. I gave her a stern look and told her that wearing makeup at her age will do nothing but attract bad boys. I didn’t wear make-up until I was in my first year of university and it was basically only because I started a waitress job at a upscale French bistro.

Fight day is this Saturday, May 1st.
There will be two female matches but I'm particularly interested in watching the one with the Japanese female fighter. This will be the second time I've seen her live and in action.

And of course, the MAIN point of going to the fights this Saturday will be to watch my amazing teammate, Panty Boy Jr., take on and take down his opponent. It's going to be an action-packed day!!! For those of you in Korea, be sure to tune into MBC ESPN to catch the fights!!!

Highlights of my Day... Wednesday, April 28

1. Ya, today was pretty much the topper for being the most unproductive of all productive days.

2. Woke up to a rumble in my tummy. The street vendor chicken I ate last night was still alive and kicking in my tummy, so I was a definite no-go, no-show for my language meeting in the morning.

3. Stay in bed all morning

4. … all afternoon

5. and for a good chunk of my evening.

6. Tried to drown out the sick chicken in my tummy by pretty much drinking a small country’s worth of green tea and by eating an equal amount of fruit and veggies to keep my strength up and to fuel up on vitamins and nutrients.

7. When I did manage to get up and start what was left of my day, or maybe I should say evening, I came across a couple of surprises Snickers had left for me. Discovered two mini love letters (love post-it notes actually). One was on the kitchen table and the other was on my jewelry counter.

8. By the time Snickers returned to Ggum Guum, I was fully awake and itching to do anything but stay in the house. Together we headed out to boxing where we were greeted by many of our boxing buddies: Motor Cross, Panty Boy Jr., and the Cheonan Bulldog. Of course Junior Mint was there too but I was surprised to see that Little Miss was there and in such high spirits considering her recent runaway. Am not too sure what happened to her parents, I get the impression that they basically ditched her so she’s been living with her grandmother. Her grandmother then handed her over, not too sure when this happened, to the city government. The other day she ran away though, so she’s been living at a friend’s house for a couple of days.

9. I’ve been true to my promise to Snickers with adopting the whole “change your thinking, change her world” mentality that he really wanted me to try, but in doing so it’s been hard. Little Miss now talks to me as if I’m an older sister, so I feel somewhat responsible for her. She’s full of curious questions, now that I’m not giving her the third degree or intimidating her at the club with my stern words. I’ve really tried to soften up for her – for Snickers’ sake actually—but in doing so she’s eagerly jumped into this new door I’ve opened up for her.

10. Snickers is loving this new soft side that I’m showing at boxing and is quick to say thank you to me after training because of it, but now I find myself worrying about Little Miss even after boxing. Honestly, she’s a pretty girl. She’s tall and slender with long hair and equally long legs. She probably could make it as a model actually. Anyways, my worry with her is that because she is so pretty and is so craving of love and attention, I worry that she’s an easy target for people she shouldn’t want to attract. One of the high school kiddies has taken a keen liking to her. He comes out to train everyday when he knows she’ll be there and he focuses solely on doing pad work with her and helping her train. She doesn’t seem to really take notice of him though. I’m sure he’s certainly not alone in noticing her, so I feel uncomfortable knowing how young and vulnerable she is. Even Snickers has commented about this, as has Motor Cross and Junior Mint too. She is definitely not the youngest at our boxing club but she for sure is one that we now all try to look out for. With her mixed up past and scrambled present, her future is questionable and that doesn’t sit well with us.

The closest I get to eating a heart-attack-in-between-two-questionable-pieces-of-bread (aka a fast food hamburger) and equally dangerous donut is buying a ceramic change holder and a ceramic one to store my trinkets in.

And though I do try m hardest to get my veggies in, I have developed an addiction for these. They're dried peas in garlic salt, and they're so delish!!!

Motor Cross gave me these ones; they're the Japanese version but minus the garlic.

Highlights of my Day... Tuesday, April 27

1. Raced off to meet up with my language group today and showed up extra early, in addition to our meetings already being brutally early that is. Today’s conversation topic was Internet addiction. Learned that in 2002 a Korean student died from playing online gaming for 86 hours straight – that’s crazy!

2. Every time I have my language meeting I always end up having the same bus driver for the ride home. I always sit in one of the back corner seats, I always eat a piece of fruit, and I always have a yogurt. It marks meal 2 of 6 for me in the day. I think the bus driver has caught unto my daily routine because he always looks at my bag when I get on, as if to say he’s curiously wondering what fruit I’ll pull out of my bag today. This reminded me today of that episode on ‘Sex and the City’ when Carrie was called into jury duty and the guy beside her pulled out a new fruit everyday from his brief case. I should bring something silly tomorrow, like a full pineapple or some freakish foreign fruit that is unrecognizable or needs some kind of instructions on how to peel it open and eat it… hahaha.

3. I tell myself everyday that I’m not going to nap but I always end up napping. Today I napped from 10am to noon, woke up for meal 3 of 6, then fell asleep again, and then woke up for meal 4 of 6.

4. Ya, today was pretty unproductive.

5. I tried overdosing in caffeine by indulging in a couple of black coffees and hoping that it’d get me up and working, but it only served to make me overly hyper and in no way possible to sit still. Ended up cranking up the tunes on my computer and busting out some old skool dance moves... and some very questionable dance moves too… hahaha.

6. Snickers craves going to the bath house like a fat kid craves the candy shop, I’m convinced of it. I thought me jumping in on his shower yesterday and scrubbing his back as if I were trying to scrap the layers of skin off would kill his craving. I know it sure as heck would kill my craving of even leaving the house if he were to do the same. Regardless however, he said he wanted to go to the bath house tonight with a friend. I’ll never get why you’d ever want to be buck naked with your friend and purposely go with one so that they could scrub you down. I can’t even do a number two with Snickers in the house without yelling out “Don’t listen” and then singing some random silly song or humming. Bathroom deeds, whether that be the actual act of going to the bathroom or using the shower always make me feel vulnerable, I guess that’s why I hate public bathrooms with a passion.

7. While Snickers was off doing whatever it is that naked people in naked places do, I decided to go to Coffee Bean to sit and type yesterday’s homepage entry. Snickers is convinced that him working will make our time together more special but I’ve yet to really be able to spend time with him unless that is you count the weekend but even then he wants to go see family. I’m not buying into his logic and am starting to really regret him going off to work. He comes home sore and late from work, only to then race off to boxing where we spend about two hours fully immersed in our training and only exchanging the odd wink and smirk. By the time we return from boxing, shower and eat, it’s coming up to 10pm and usually by 10:30-11pm he’s too exhausted to stay awake. So basically, during the week the only real quality time I spend with him is in the morning car ride to my language meeting, a 15 minute drive that, given the earliness of the drive, I’m usually half asleep during.

8. If Canada were only but a long car ride away, I certainly would have willing walked that route tonight – I would have walked that route backwards, barefooted, buck naked, and in ten feet of freezing snow with no food in my belly and frostbite claiming another toe every so often. Boredom use to turn into clean-freak mode and make me excessively sleep but it’s changed. I can last a year without seeing friends and family but I’m creeping up to two years and it’s just way too long. Now days, boredom does two things to me, it either makes me eat when I’m not hungry or it makes me easily homesick. Today I got out of falling for number one by excessively drinking coffee and green tea, but I had no backup plan to deal with number two besides distracting myself with a visit to Coffee Bean.

9. Distraction only worked for so long and was broken by the giggling of a couple of foreigners whom had sat at the next table. What I wouldn’t give to have it be Homegirl or Italiano’s laughter breaking my silence. Today Italiano had text messaged me, he texts me quite frequently. I miss stirring up trouble with him. He’s pure rock star.

10. Leave it to Snickers to turn my frown upside down; he’s always guilty of having this super power over me. I blame it on his A.D.D-like manners, big heart, charming good looks and duck-bum.

Highlights of my Day... Monday, April 26

1. If there’s anything set on my daily schedule it’d be “don’t put off for later what you can do now”, so on that note I got in my run during the morning. And it’s a good thing too because no sooner did I return and do my warm-down stretching out in the park but then it started to rain.

2. Meet up with Cherry Pie for lunch at a Vietnamese restaurant that I’ve been wanting to check out for some time now. I ordered the same very dish I use to back in the day when I use to visit this little hole-in-the-wall Vietanmese restaurant in Toronto after boxing. Tasted pretty much the same, minus the missing almonds that is and minus the fact that this place gave me twice the noodles – I’m not a fan of noodles.

3. Visits with Cherry Pie are never short of girl talk and never consist of just one activity. Today was no different. Lunch was followed by coffee and coffee was followed by running into a kind of so-called business partner of mine, being introduced to someone new, and being joined by Cherry Pie’s husband, Sweet Tart.

4. Spilled my beans about my near death experience last night on the scooter and Sweet Tart’s eyes just about popped out of his head when Cherry Pie turned to him and asked if he would buy her a scooter. Instead of him simply saying no, he gave her an ultimatum, a couple actually. “A scooter or a car …a car or a laptop computer …a laptop computer or a bicycle.” I laughed so hard at the fact that he went from offering to buy her a car to working his way down to a measly bicycle. “Don’t worry” I told her. “You can ride on the back of my scooter”, and with that Sweet Tart was stumped for words and was defeated.

5. Cherry Pie lives a life of luxury and leisure but Sweet Tart says this is making her lazy. She’s fairly small in size but says she wants to get leaner and Sweet Tart is always telling me to help her out and to “take care of her”. I think I’ve figured out an appropriate plan to get this anti-sports girl more active – a bicycle. I figure that if she had a bicycle she could ride beside me while I run. She could then lock up her bike and do a lap around the Dankook lake with me. “One lap is only 2.3kms” I told her. “Only?!” she said sarcastically.

6. Heard the funniest of Konglish words today and who should say it but Cherry Pie. “Hip burp” was the phrase she used in her conversation. At first I had no idea on what that meant. I know Koreans are always mistaking the bum for hip but “hip burp – bum burp”, that’s a new one. Turns out what she meant to say was “toot”… hahaha.

7. Upon arriving at boxing tonight, Snickers ran up the stairs and just as I was about to follow behind him someone pulled on the back of my sweater. It was Little Miss. I asked her why she was hiding in the bottom stairwell and she seemed uncomfortable answering that. From what I understood of what she said, she was afraid to go to boxing tonight because Junior Mint was mad at her. I didn’t get why he would be so mad as to scare her like this but she seemed really uncomfortable. “He gets mad at everyone, don’t worry. How about we train together tonight?” I asked her. She seemed to brighten up with my words but when I went to take her hand and go upstairs with her she stepped back. I didn’t really know what to say after that, so I told her that if she changed her mind that I would be upstairs waiting for her.

8. I stalled my training by twenty minutes, waiting for her. She never came. I did my usual training – skipping, shadow boxing, pad work, heavy bag, weight training, and abs – but she still never came up. It wasn’t until I went to the bathroom after training that the whole situation unfolded. I looked down the stairwell when I left the bathroom and she was still there, some two hours later. Again I tried to get her to come up but she refused. When I was taking off my boxing boots I overheard Motor Cross and Junior Mint talking; they were talking about Little Miss. Turns out what happened was Little Miss had run away. The city informed Motor Cross of this today and he had called Junior Mint, asking him if she had shown up at the club today. I motioned for Motor Cross to follow me out into the stairwell where I there whispered to him that Little Miss was only but three floors down from us. Motor Cross has become somewhat of a designated big brother for her now that the military has assigned him to work at where she’s staying, or was staying, so he’s been running around like a chicken with his head cut off today trying to track her down.

9. Panty Boy Jr. continues to disappear, in size that is, as he prepares for his fight and struggles to drop the required weight in time for his fight this weekend. He’s got less than four days to lose just a little over 3kgs.

10. As for the rest of my evening, well what little was left of it, I headed over to K-Gere’s house to feed Kimchi and Chumchi, I returned home to play with Mi Nam, and then it was an early lights out for me.

Highlights of my Day... Sunday, April 25

1. Last night I totally called Snickers out on his typical Korean-guy manners at his mother’s house, so I was definitely not interested in heading out there again today. I know Korea is becoming much more modernized, in more ways than one, but with the only real exception being that of K-Gere, his family is very much into maintaining old Korean manners which, for an independent and strong woman like me, definitely doesn’t sit well. Today I woke up and replayed the whole situation in my head. It wasn’t a big deal really but I do remember telling him something along the lines as “unless you want me to break your legs I suggest you stop expecting the women – your sisters and mother – to cater to you” and “pull this stunt in Canada and it’ll be my mom breaking your legs, not me!” Oh gosh… yes, I really said that to my husband… terrible. I don’t regret saying it though, regardless of how harsh it is.

2. I know the Korean culture is totally different than that to which I was brought up in, of course, but sometimes I just don’t understand how they don’t see things. Ok, fair enough, it’s easier as an outsider looking in to see and be able to point things out, and yes, I am trying to maintain the whole ‘just because something is different doesn’t mean it’s wrong’ mentality, but some things are just too off for me. It drives me bonkers that, for the most part, Korea puts the men first and expects women to be submissive, and I see this every time we go to Mama Kim’s house. Snickers is all about our ‘fusion couple manners’, as I call them, but he so easily disregards them at Mama Kim’s house.

3. Take for example yesterday morning. Snickers and the twins made a huge mess of the toys at Mama Kim’s house but when I commented about it when he got up to leave, he noted that his mom would clean it up. I shook my head and told him and the twins to clean up. I wasn’t harsh in telling them but instead made it kind of a game with the twins to see who could pick up the most toys the fastest. Mama Kim insisted that it was okay but it wasn’t okay. “No husband of mine is rude” I told her.

4. There are parts of the Korean culture that I really admire and really appreciate, but there are parts that I totally roll my eyes at and cringe at, this part just happens to be one of them!!!

5. I waited for Snickers to return and then we headed off to Dankook to drop off the Texas chicken wings we had bought from one of my former coworkers. But before that actually, Snickers wanted to give me a quick driving lesson on the scooter. I had mastered using stick shift in the car yesterday on our way to and from Daejon but today it was time to learn the scooter. I’ve driven a scooter before, plenty of them actually thanks to Panty Boy, but our scooter is quite a beast.

6. If Snickers were a father, he’d definitely be one of those fathers who’d throw his kid into the lake and yell out “now swim” to his kid who’s never learned before. I say this because for today’s lesson one of scooter driving he told me to drive to Dankook, which meant venturing on to a major road.

7. We decided to have a dinner and movie date tonight but our choice of restaurant wasn’t the best. I had been recommended to go check out this new pasta and steak house but upon entering it we knew we should have gone somewhere else. It looked as if Barbie had puked every where because everything was a pinkish-purple color, I’m talking about the walls, the ceiling, and even the salad dressing was this cheesy pinkish-purple color. I didn’t know whether it was because there was a sale on that color at the store that day or if someone was overly obsessed with that color, regardless, it was way too much. It looked like a love motel but with sit-down food and tables. Don’t get me wrong, the food was good, a tad bit strange but good, but the interior design of the restaurant was embarrassingly over-the-top and hurt my eyes.

8. Snickers said he felt like a clown at some kind of amusement park fun house and so for the rest of the dinner he tried to amuse me with his silliness. I was all giggles and smiles until the waitress showed up unexpectantly and he accidently spat water at her… oops!!!

9. As for the movie, ‘Kick Ass’, it was just as tasteful (sarcastically speaking that is) as the restaurant. I got ID when I bought the tickets so that was flattering… hahaha… but that was pretty much the best part of the whole movie. I’m not really down with overly bloody ‘Kill Bill’ style movies and I am certainly don’t think it’s funny to hear some child actor recite curse words that she obviously is too young. Pick the worst curse word in the book and that was pretty much what her lines were filled with.

10. After the movie I had yet another scooter lesson. This lesson, unlike the first one, almost ended early when I took a turn too wide and almost crashed into two cars AT ONCE!!! Snickers was fast on the reflexes so he grabbed a hold of the handle bars and shifted his weight just in time. I made him swear that he wouldn’t tell anyone that I almost killed us but later we had a good laugh at it. We cruised around the Dankook campus for a bit and he had me do numerous drills, like backing the bike up and whatnot. Snickers made for a really great driving instructor. He sat on the back of the scooter, guided me through it all, encouraged me, and rewarded my efforts with random kisses. His kisses alone we worth all the effort... hahaha.

Double trouble in the back seat.

Highlights of my Day... Saturday, April 24

1. Anticipated plan for this weekend: Drive out to Costco, learn how to drive stick shift and master driving our scooter. I figure now that we have a car the least I could do is use it and abuse it, which means also learning how to drive it myself. Moreover, I bought the scooter a while back and have yet to drive it. Snickers is always driving it and, though it’s so much bigger than the scooters I use to drive, I figure it’s about time I got behind the wheel.

2. My mother use to joke and ask me if I was trying to grow potatoes in my ears, Snickers asks me the same thing. So, as gross as it sounds, Snickers now cleans my ears… hahaha. Too much information, so be it, at least it’s too much information from someone with clean ears… hahaha.

3. Visited Mama Kim’s house for a brief bit because K-Gere had asked us to pick up the twins (my two nephews) and bring them over to his house. Hyun Jun is my favorite of the two, though I am definitely warming up to his brother. You know how when you were little, you could always tell what little boy liked you based on whether he hit you or not? Well, apparently that child-like manner is international. Those two boys must really love me cause not only did I have a fake cell phone propelled towards my head but I they tried to repeatedly poke me in the back with a plastic sword… hahaha. No real injuries so no worries but I did play up the idea that I was hurt. Hyun Jun was quick to kiss my back with his ‘magic kisses’… hahaha.

4. Next on our list-to-do was Costco but before that we stopped by Kyobo Bookstore and grabbed a CD for the drive. Bought a CD called ‘Love Stories’. It consists of 5 CDs loaded with many old skool love song favorites from various artists and bands like The Corrs, and Mr. Big. I love old skool songs!!! Snickers just about had a heart attack when ‘Eternal Flame’ by the The Bangles started to play. As cheesy as I’m sure many people think this song is, when I was younger I use to think it was one of the most romantic songs. I was only nine when it hogged the number one spot on music charts but it wasn’t until I was in grade seven, some 3 years later, that I fell in love with this song. I had walked in at a school dance and it was playing. There were the boys on one side, the girls on the other, and a couple of teachers and parents mingling. And me with my more-than-healthy imagination that always seemed to work overtime, I had convinced myself that at my grade eight graduation dance that me and my crush would dance to this song. I never did end up dance to that song but I did get asked to graduation by none other than my crush, Evan, the only Asian kid I knew.

5. Arrived safe and sound at Costco in Daejon about two hours later. Traffic was brutal but I had turned the long car ride into a kind of karaoke trip, teaching Snickers some key lines to many of the songs. He may have very well mastered the first minute of ‘Eternal Flame’… hahaha.

6. Snickers has never been to Costco, let alone has ever heard of it, so he was like a kid in a candy store at the sight of crates of food stacked up to the ceiling. It was definitely sensory overload for him… hahaha.

7. We hadn’t really made a list of things we wanted to buy with the exception of oatmeal and protein powder shake. We scored with the oatmeal but the protein powder they had was definitely not worth shilling out so much for poor quality. We did, however, manage to pack our shopping cart full of stuff. I picked up some cheddar cheese for a former coworker and Texas chicken wings for another former coworker of mine. For my sister-in-law, we grabbed various things for her nursery school and then we got this massive apple pie that left me with a sore arm for carrying it… hahaha. Snickers went to town with buying a huge box of ramin and beef jerky while I stocked up on oatmeal, organic granola cereal with added flax seed and pumpkin seeds, seasoned chicken, and other things like frozen string green beans and frozen blueberries.

8. With a car packed with well over $200 worth of goodies, we made our way back to Cheonan. The plan was to drop off the groceries and then head over to Mama Kim’s house to indulge in the apple pie with Mama Kim, my two sister-in-laws, and the twins. Well, that was the plan. It got delayed though when we received a totally unexpected phone call just as we were pulling into Mama Kim’s apartment complex.

9. Immigration was waiting for us back at Ggum Guum. Returning home to an immigration officer standing outside my door at 9pm was definitely a surprise. We invited the officer in and then he started to ask us numerous questions. The interview only lasted about thirty minutes and it ended with him telling us that he expects my visa processing to be completed by this week, next week at the very latest. Awesome news!!!

10. After the interview, we jumped back into the car and headed over again to Mama Kim’s house where we were greeted by huge smiles when they saw the over sized apple pie we had got them. It was pure delish!

Highlights of my Day... Friday, April 23

1. I may not be a ‘back seat driver’ but I do have a bit of ‘horn hog’ in me. While Snickers may satisfy his frustration with other drivers by muttering a couple words, I tend to not hesitate at reaching over his lap and giving the horn a good slap. Reaching for the scooter’s horn button isn’t as easy.

2. Met with my language group. They’re a great group of guys, so it’s awesome to go from the bed of my wickedly awesome man to the office of these hilariously sweet guys. Makes for a fun morning.

3. The other day a new guy joined my language group and my jaw just about dropped when he walked in the door. I blushed at the sight of him because, at first glance, he looked just like Snickers. Of course, the more I looked at him the more I could spot the physical differences. His face was wider, his cheekbones weren’t as defined, and he wasn’t as lean. Regardless, I had a good giggle at the situation and so did the guys when I filled them in on why I had gone from being a mature 29 year-old woman to that of a giggling preteen girl.

4. So much for getting down to business and do a long list of errands I had scribbled down in my agenda, it was lights out for me as soon as I arrived back at Ggum Guum from my morning meeting.

5. Afternoon nap time has been officially replaced with morning nap time.

6. Weigh-in for week three of Operation Phat and it’s been great to read the success stories – and even the not-so successful stories.

7. Today was day two for Snickers and his new job. I thought I’d be a sweet wife by cooking up a wickedly delicious Korean-style dinner, equipped with all the fixings, numerous side dishes (due credit to Lotte Mart there), and even candles and wine.

8. When Snickers got off work he called me to ask me to grab his boxing gear and to tell me he’d be by in ten minutes to pick me up for boxing. I tried to lure him in the house but it just didn’t work, so I blew out the candles, put all the side dished in the fridge, and left my cooked Korean beef on the table to get cold.

9. Two and a half hours later, after sweating our brains out at boxing, dinner was reserved.

10. And by 10pm he was out cold for the night, too exhausted to finish off the scary movie that was on TV. I, being like a horse with blinders on when my eyes make contact with a scary movie, couldn’t peel myself away though the movie scared the heck out of me.

Highlights of my Day... Thursday, April 22

1. “What is happiness to you – having or doing?” I asked a particular person today. Lately, happiness to me has been a matter of not, NOT having and NOT doing – not having the stress of working at a place I no longer respect, not having a set schedule to abide to, and being made to deal with the stupidity of certain people like I once had to. Life for me now is a lot simpler and a lot more straight forward.

2. Happiness is wanting what I have and being grateful for what I DON’T have.

3. I’m a pretty basic person now. I do what I want when I want, go where I want with whom I want, and all those other annoying distractions in life that so thoughtlessly took pieces of me away, whether that be people, places or whatnot, have all been pushed out. It’s taken a lot of effort on my behalf though to get to where I now am. Resigning from my position at Dankook was the first active step I took but all the other steps I took, which at first looked like a huge step to take but, in actuality, it was but just a mere baby steps in comparison to other steps I’ve taken recently.

4. One of my language group members asked me to give him a name. I assumed he meant an English name but, as it turns out, he wanted a Polish name. Today I showed up with a great Polish name for him and a bunch of those bulgogi burgers for the whole group. Only 7 more burgers to get rid of.

5. Despite still not having my F2 visa processed, which let me tell you is so beyond annoying and frustrating, I’ve agreed to a part-time substitute teacher position out in Seoul for two weeks in May. I figured my visa would be ready by the time the gig actually started.

6. Today I headed out there for a meeting regarding the substitute position. I must admit, the teacher I am substituting for has a pretty cool teaching position. She teaches at a couple of community centers in Seoul where having fun has been given priority over actually learning English. She works only three days a week and, judging by the pay their offering me, she makes a pretty sweet paycheck. As for her students, the students who attend her classes are from lower income families who can’t afford the hefty private hagwon tuition fees and their parents aren’t curriculum-pushing, high-test-expecting parents. If anything, they’re parents who are grateful for the opportunity to have their son or daughter experience this opportunity that the city has set up for them.

7. Am looking forward to being able to experience it, too.

8. Snickers is now officially an 8-6 working man (actually it’s more like 8:20-6, but whatever). Yup, it’s true. Today was his first day on the job, so I woke up early and made him eat a full breakfast that I had cooked. Throughout the day I texted him and he seemed really happy to be able to further contribute to our ‘nest egg’ that we have at the bank.

9. After a full day of traveling here and there, I returned to Ggum Guum only to have Snickers come home and push me off to boxing.

10. I eat every three hours, six times a day. I had started my day off with a protein-packed oatmeal pancake and had packed my purse full of clean-eating goodies for my trip out to Seoul but in the business of my day I had missed a meal. I blamed it on the fact that I fell asleep on the bus. I was hoping to get in a quick bit before boxing but Snickers insisted we go at our regular time, meaning getting a bite in was a no-go. By the time I finished boxing it was approaching 9:30pm. I hadn’t had anything to eat since 4pm, so I was getting agitated by hunger pains and was getting the ‘feed-me-or-I’ll-eat-you’ look in my eyes. Snickers wanted to stay longer at training but I knew I’d be turning into the Polish-Hulk if I didn’t get home and eat something. Well, I ended up turning into the Polish Hulk. It happened when I arrived to Ggum Guum and one of my neighbor’s had locked the front doors extra early. I only had my apartment key on me, so I resorted to shaking the heck out of the front doors, hoping that this would not only get my neighbor downstairs to unlock it but also help me vent my frustrations. Neither response happened though some local dude did walk on by to stare at me. He gave me a ‘look-at-the-crazy-white-girl’ looks, to which I flashed him a mean grin and he quickly continued on. Thankfully Snickers had noticed my front door key sitting on the table at the club. Ten minutes later he showed up. “How many people did you scare?” he asked me… hahaha…. “You know me too well” I replied.

Highlights of my Day... Wednesday, April 21

1. Morning meeting number 2 of 4 for this week and waking up super duper early isn’t getting any easier.
2. Quit the language exchange group because now I can run my own group on my own terms and instead of it costing me $5 a coffee per meeting, they’re willing to pay me a dollar a minute, literally, and I get unlimited free coffee… sweet!!!
3. What was supposed to be a drive out to my sister-in-law’s daycare ended up being a drive to the local Cheonan jail – which in my eyes is pretty much the same thing… hahaha.
4. Strange things always spark my curiosity, so when Snickers’ pointed out that we had just driven past the Cheonan jail, I told him I wanted to check it out. And check it out was definitely what we did. The entrance was a long winding road, and, oddly enough, in many ways it reminded me of going off to summer camp. There was a big yellow sign that we drove under and rows of beautiful trees lining the road. We parked the car near a security guarded gate and then walked right in. It was one of the strange feelings. I’ve never been to a jail before but this was nothing like I had imagined. There were numerous buildings with different signs, unlocked doors, and people walking freely in-and-out of them. “Are they jail people [inmates]?” I was quick to ask Snickers. “No” he laughed. From what I understand of what Snickers told me, the main part of the jail where are the inmates are located is basically a building within a building, so all these other buildings that spotted the jail grounds were basically only for visitors and staff. I did, however, get to go into the building that surrounds the real-deal building.
5. The only area that was open for me to venture into consisted of visitor rooms where visitors could arrange to visit inmates via a room that was divided in two but a plain of glass and bars. I couldn’t bring myself to sit on the actual visitors chair but I couldn’t resist secretly snapping some shots with my camera phone. Snickers told me how each month each inmate is only allowed four visits, each lasting of ten minutes. I had mixed reactions about that fact, knowing that it must have killed Snickers to not only be physically not to touch and hug his mom but to only be allowed to see her a total of 40 minutes a month, that is if she didn’t have to give up her visitors’ time so that one of his friends or other family members could visit him. “I waited all month for those forty minutes” he told me.

6. I’ve always told Snickers to be proud of himself, regardless of what others may think or say about him. I’m not saying I am proud that he did hard time but I will never ever say I am ashamed or embarrassed of it. He is who he is because of everything he did from yesterday back, there’s no changing the past, only learning what you can from it growing. If you’re a better person today than you were yesterday and are happy, well, that’s all that matters. And yes, I am well aware that his bad history may very well stop us at the border this summer and send us back to Korea without me being able to see family and friends, but I swore on the day we married that I would support him no matter what – till death do us part. I told him that if Canada lets me in but says no to him than I’ll go home with him. It’s both of us or no one.

7. Was considering going back to working in the Korean public school system because that was the place I felt the most successful, most happy, and most connected with not only my students but with my coworkers and with what went on at the school, however, I’m second guessing this thought now.

8. I started second guessing it today when I was approached, yet again, to take on some tutoring gigs once my F2 gets processed. The person that approached me presented me with quite an attractive offer – list of agreed upon students, readily available curriculum and resources, a location for me to tutor, and an hourly rate that is very respectable. Basically when it comes down to it, if I chose the public school system I’d be forced to work a 9-5, but if I chose this other route I could continue my language group and do the tutoring for more money than the public school board would pay me – or Dankook for that matter – with half the hours required. The public school job is a more safe and secure steady income, but this second option is attractive in that it’s got a lot of potential for me to earn more money and have more time to persue other things like my boxing, substitute teaching positions, and media extra work.

9. Today= day 63, week 9 of waiting for my F2 to be processed.

10. Oh, and as for that massive box of bulgogi burgers, we were a big hit tonight at boxing when we decided to hand out about 20 of them to the students… hahaha. Good times! The students were loving the burgers though we didn’t dare to tell them how we got them but instead made up a story, telling them that one of my former students gave them to me. Even I didn’t believe that story and though I think most of those at boxing didn’t either, they bought the tale and gobbled down those nasty smelling burgers… hahaha.

I didn't care what he was cooking, the mini cooking show and the fact that he was cooking for me was more than enough.

Highlights of my Day... Tuesday, April 20

1. Had an early morning meeting that was beyond early. It was scheduled for 7:40am but I had to leave at 7am for it, so I woke up at 6am with anticipation of getting in a good morning jog before heading out.

2. Ya, the jog never happened. I woke up, slapped the alarm clock a couple of times, and then called out “spoon”… that’s one of Snickers new words… hahaha. I thought him what it meant ‘to spoon’, so on average he wakes up twice during the night, nudges me, and blurts out “spoon me”… hahaha. I got to give it to the guy, he definitely makes for one super adorable husband. I love him to pieces.

3. My morning meeting was a total success and I am scheduled to come back tomorrow, Thursday and then Friday… sweet.

4. My usual daily 5pm nap time got switched to 10am. Waking up so early today just about killed me and by 10am I was more than half in the bag.

5. Snickers lectured me today about Little Miss ‘I’m-cruising-for-more-than-a-bruising’, telling me that I should give her a break. Although he agreed that she needs to brush up on her manners, he told me “you could change her life”. He then continued, telling me about why Motor Cross introduced her to our boxing club. She’s an orphan, a middle-school orphan who has grown up under the care of the city and who Motor Cross met at the place where he does his military service in Cheonan. She hit a soft spot with Motor Cross and so he’s kind of taken her under his wing as a kind of older brother. Though I still think this doesn’t fully excuse her from exercising manners, I felt sorry for her and wanted start over with her. I was too harsh on her. Snickers is always telling me “Change your mind, change your life” but today he challenged me by telling me to “Change her mind, change her life”.

6. Honestly, I really didn’t know what to do or how to really apply Snickers’ advice, I mean, I didn’t want her to feel like a charity case but I also didn’t want to continue treating her the way I had been.

7. After boxing, when I was taking off my gear and getting ready to leave, Little Miss (minus the rest of the original name I had given her) sat down beside me. “Are you really married?” she asked me. I laughed when she said she envied me and that she wanted a husband too. “But you’re like 13 years old. Enjoy being a kid. You have your whole life to find love, so enjoy the wait and don’t push it”, was my advice.

8. Got ‘bonus public kisses’ at boxing from Snickers tonight for being a newly refined ‘good girl’, as Snickers called me… hahaha.

9. Was put in such an ironic situation tonight. To think that Snickers didn’t get a security job because of his bad history check yet at 2am a certain security guard at a particular establishment willingly handed me a set of keys. I don’t even work there anymore. Great security.

10. Found a box of 50 burgers… I’m not joking! Snickers and I were returning to Ggum Guum when we came across a random box in the middle of a parking lot. It must have dropped out of a delivery truck. It read ‘meat’ across the sides of the box, so Snickers scooped it up to take it home with us. Upon arriving back home, we ripped open the box and there before us was 50 bulgogi burgers individually wrapped. Snickers laughed out loud and thought it was great. I, on the other hand, questioned what the heck we would do with 50 bulgogi burgers that we don’t even particularly like to start off with let alone would ever manage to consume 50 before the expiry date (a week later). Snickers scarfed down one and I watched. Ggum Guum instantly stank of bulgogi, so I made him store the box out on the balcony. Maybe I’ll give one or two to Mi Nam… hahaha.

Highlights of my Day... Monday, April 19

1. Packed up the car for yet another road trip adventure, adventure number two in the past three days, cool. Today’s destination was Daejon to see the cherry blossoms.

2. A major company in Daejon (KT&G) hosts a rather large cherry blossom festival every year, as do many other places in Korea, but their company grounds are loaded with trees like none other! The actual festival was this past weekend but they’re still allowing people to come in and enjoy the trees.

... and he even played limbo with them.

I quite liked it when he shook the heck out of the branches and gave me a shower of cherry blossom flower petals.

3. What I didn’t enjoy however were the outhouses. Leave it to Snickers to think it’s funny to open the door while I’m on a sqwatty-potty (spelling?!) and then trip, leaving the door open for all to see. Ya, thanks. I sought out revenge by jamming the door handle while he was in there, making him inhale the nasty fumes. Payback baby!... hahaha.
4. The cherry blossoms were so beautiful and there were just so many of them!!!
5. No simple leisurely activity is experienced without a good handful or two of silly games or horse-play when Snickers is involved. First it was the massive shower of cherry blossom petals he gave me by jumping up and shaking the tree branches. Next it was playing limbo with the branches, followed by numerous other things like rolling in the dried grass and one-leg races.
6. Our silliness worked to create quite a hunger between the two of us so on our route home we stopped off at a street side vendor and bought mandu. We sat in a local elementary school courtyard and ate it while little kids played.
7. With our bellies now happy but one mandu left, Snickers called out to one of the little kids who had been playing alone. I was shocked to watch as the kid, no older than 7, approached us, accepted our mandu, and then walked away eating it. “This would never go down in Canada” I told Snickers. I certainly feel a lot safer in Korea than I do in Canada. The mentality of the people here is just so different. Kids freely walk from place to place without the need for an adult and they’re not intimidated when an adult approaches them. Whether it’s because of perverts, child molesters, or dangers that come with being out among traffic, Canadians have such a strong fear installed in them with regards to their children. I was never allowed to accept candy from strangers let alone talk to strangers and here was this little Korean boy eating my left over mandu the size of his fist after he had bowed to thank us for it. What a difference in countries, in cultures!
8. Returned back to Ggum Guum just in time for our 5pm nap time.

9. Woke up and off to boxing we went. With Panty Boy Jr.’s fight but less than two weeks away, Snickers’ training intensity has leaped to another level as Panty Boy Jr. tries to cram in all the sparring he can. Oddly enough, I totally envy Snickers for this too. I wish I was pushed to such intensity with training besides the self push I give myself.
10. Tomorrow I have an early morning meeting and am scheduled to make sure I’m out the door by 7am… ouch!!! So much for trying to get a good night’s rest for my meeting too, Snickers was a little Miss Chatty tonight at bedtime.

Highlights of my Day... Sunday, April 18

1. I hadn’t scheduled a language exchange meeting today on account that the turnout of Koreans ranges from a couple to none and I question as to whether I’m really benefiting from it. Moreover, I could be doing the same thing and getting paid for it, an idea that a certain company has approached me about, and I also had another meeting to attend today and it was of more importance.
2. My early morning meeting was regarding a business proposition.
3. I’ve somewhat have become like a second manager for Snickers, so after my first meeting in one coffee shop, I then raced off to another coffee shop for a meeting regarding a potential boxing sponsor for Snickers. I would have brought Snickers along for the meeting but it was a kind of unexpected meeting and I knew I could work my charm on my own just fine.
4. Meet up with Cherry Pie for some hardcore chat time and window shopping.
5. Wedding dinner party planning continues and it’s frustrating. As if party planning wasn’t hard enough, I’ve taken it upon myself to try to pick a place via the Internet and then contact them about details, so it’s been like write an email, wait one day for a response, repeat. Thankfully my two lovely lady friends back in Canada, Fisky-Fries and Homegirl, are acting as my wing men (well, ‘wing women’ to be correct here) because I wouldn’t be able to do it without them.
6. As for my evening, I had a movie date with Snickers.
7. We had some time to kill before the movie started, so we headed into the Multiplex for some arcade-playing fun. I’m hooked on that silly ‘spot-the-difference-in-the-pictures’ game that leaves my eyes squinting and my pockets empty of coins… hahaha.

I come fully loaded -- with a pink gun that shoots, a short dress to distract the target, and butt-kicking legs for backup... hahaha.

8. “Blind Side” was the movie of choice tonight. It starred my oh-so-loved Sandra Bullock and it was one of those ‘feel good’ movies.

9. I’m not one for being star struck or for caring any more about the life and times of celebrities than I am about the price of rice in China, but lately I caught word of the naughty life of Sandra Bullock’s husband. Strangely enough it became the big topic of conversation tonight between Snickers and I. I’ve never been a believer in the saying “Once a dog, always a dog” but I’m a firm believer that you can never forgive if you can’t forget. Love may be able to move mountains but it moving a bad memory from your heart is different thing. There’s a lot of things, bad things, that I am willing to overlook in a relationship but a cheating mate is not one of them, not for me at least. Hats off to those who can move past it but I doubt the whole forgive and forget ever happened. Anyways, my biggest fear with getting married was marrying a cheating man. I think it would just destroy me and put me permanently on the “I-hate-men” membership list. I once told Snickers that if he ever cheated I’d cut off his ‘secret part’ and feed it to him. “But you’d go to jail” was his response. “Sure” I replied, “but I’d be like a hero to many women and you’d always been known as the man who ate his penis – try explaining that to a new girlfriend!”
10. New English phrase for the day for Snickers was ‘tough love’… hahaha.
