1. On account that my cell phone battery so conveniently died during my sleep, I woke up late and missed my meeting with the Cheonan Trump. No worries though, turns out he wasn’t able to make it today and I don’t really care to continually practice my putt.
2. My day off… sweet. Woke up and did my usual sitting on the floor routine with Mi Nam and a bowl of oatmeal, chicken and Skippy peanut butter (boo for no more natural Skippy peanut butter though!) and then I spent a good chunk of my day preparing my Power Point for my reading class.
2. Turned my TV on for the sheer purpose of not having a quiet house and I jumped back in surprise when I suddenly recognized the Cheonan Trump’s voice on TV. He did a commercial recently but seeing it today while standing in my bare necessities felt so wrong and so I quickly covered up and caught the tail end of it… hahaha.
4. For the past month or so I’ve been on this huge chicken kick and so I’ve been resorting to eating chicken everyday for my protein as supposed to my once beloved, craved-for eggs. Well, time has taken it’s toll on my eggs and so today I thought it about time to throw them out. Out went 60-some eggs… what a waste.
5. Despite my weight staying consistent, Junior Mint’s not happy and so starting Monday I’ll be heading back to my morning training at Hongik, followed by evening training at the boxing club. Diet is 80% of your body composition but trying to tell him that is like trying to convince a Korean not to eat rice because of it’s carbs. Koreans will always eat rice, just like Junior Mint will always insist training is key. I haven’t been weight training at Hongik for about a month and I miss it but have instead been doing some light weight training every day at the boxing club after my usual boxing training.
6. Trying to get a jump start back at Hongik today crashed and burned when I arrived with only an hour to train and ended up using that time chatting up a storm with a long-time-no-see fitness friend. Yup… definitely will have to try again on Monday. Monday morning early morning weight training, not looking forward to a 6am workout!!!
7. Day one of no beats for me at boxing… wicked but I doubt there’ll be many days like this.
8. Was quite successful with convincing several of my boxing teammates to attend the boxing dinner party tonight and so it was definitely more enjoyable than expected. There were 14 guys and only 2 of us girls, me and S-Line Wanna-be... sweet. I pretty much stuck to chatting it up with Panty Boy Jr. and Black Skinny. Oh and good news... Black Skinny's new baby finally has a name, Tae Hyun. I'd like to think I had some say in this too cause last night he and his wife were still indecisive about three particular names. I picked Tae Hyun, partly because I liked the sound of it and cause it was close to my Korean name, Su Hyun... hahaha.
9. Cause of the whole hierarchy with Koreans and elders pretty much having control over the younger generations, Junior Mint was quick to become a victim of the “one shot”. Junior Mint doesn’t drink but according to Korean culture, he can’t really say no to an elder offering him a shot of soju or alcohol. All it took was two shots and his face turned red. No sooner had he downed two shots but they he realized he and Black Skinny had to go train together at the club… oh gosh. I wonder how well that went… hmmm.
10. I was smart and kept my shot glass full of water. No soju for me, thanks. After dinner the elders tried to convince us to head over to a bar but I, being a smarty, decided that I was going to get “conveniently” lost and then I “conveniently” found my way back home… hahaha.

As the story has it, one day I headed to the opposite side of the globe – the Flipside. I arrived in Korea February 16th, 2005 and thought I’d do a year, then leave. I was wrong. I stayed, launched my first company, Flipside Fitness, and then opened Korea's largest boxing club, Hulk's Boxing (now called Hulk's Club).
After 11.5yrs in Korea, I then picked up one day and returned to Toronto, Canada. But then I left again.
Now I live in the Philippines where I am the CEO and head coach of Empowered Clubhouse, the Philippines' first and only boxing clubhouse exclusively just for women. I also am the founder of the Lil' Sistas Project, CEO and designer of Slay Gear and Baa Baa Black Sheep .Ph.

Hey Amy, how do you cope with cooking the chicken every single day!? Or do you cook then freeze the chicks and warm them up when it's time to eat them? I'd really like to know as I'm living on my own and I really like the way you've been eating clean. Cheers!

Hahaha... No, I don't cook chicken everyday. I usually cook it only twice a week, sometimes only once. Needless to say it's A LOT of chicken cooked at once!!!
I usually boil it or throw half of it into the frying pan. I don't usually add spices but you could if you wanted to.
I like throwing my chicken into salads or I make "green wraps"... it's like a tortilla wrap but the tortilla is substituted by any kind of lettuce or green lefty veggie I have. Boiled chicken in oatmeal is my favourite though... try it out. I've been trying to hold off the peanut butter now that I can't find natural Skippy peanut butter any where in Korea. Instead, I've been putting cinnamon on it.
Thanks for the support, it's not always easy to eat clean, especially when I live in a country to set on eating being a huge social thing!
