As the story has it, one day I headed to the opposite side of the globe – the Flipside. I arrived in Korea February 16th, 2005 and thought I’d do a year, then leave. I was wrong. I stayed, launched my first company, Flipside Fitness, and then opened Korea's largest boxing club, Hulk's Boxing (now called Hulk's Club).

After 11.5yrs in Korea, I then picked up one day and returned to Toronto, Canada. But then I left again.

Now I live in the Philippines where I am the CEO and head coach of Empowered Clubhouse, the Philippines' first and only boxing clubhouse exclusively just for women. I also am the founder of the Lil' Sistas Project, CEO and designer of Slay Gear and Baa Baa Black Sheep .Ph.

Highlights of my Day... Wednesday, July 2

1. With literally only seconds to spare, I caught the 8:45am bus to Seoul. Off I zoomed to Korean class where I felt like I opened up a can of worms by bringing up my last video. You see, my Korean teacher watches my videos on YouTube and so I wanted to explain to her that yes, I do love Korea, but there are some things I don’t agree with. No worries… my teacher is quite the worldly woman who is more than aware of life outside of Korea. She rocks.

2. Ended up getting into quite the discussion with her in which she let me in on a bit of info regarding the 1988 Olympics that were held in Korea and a very surprised Korean boxer who won a gold medal… interesting! OK, OK, OK… no more bullying up on Korea and it’s boxing. Leave the fights for the inside the ring, right?!

3. Next week I am having a vocabulary test at tutoring on the past three chapters I studied in my level 3 textbook. Vocab is killer and I’ll be the first to admit that I like sticking to the easy words that quickly come to mind as supposed to trying to fish out those harder words and newly acquired words at the back of my brain.

4. Strolled into my friend’s hair shop today to get my bangs trimmed and hair dyed.

5. Am feeling quite pressured with my hopes of visiting Canada next month. It’s still not a definite but I’m feeling quite pressured to wow my friends. They all know I’m a boxer and so when they look at me I want them to think, “Yes, she is DEFINITELY a boxer!” And so, on that note, I’ve been really stressing my diet, eating times, and training. I even went so far as to set my alarm clock on my phone to alert me of when I should eat: 9am, 12 noon, 3pm, 6pm, and 9pm. I’m really missing my weight training and so I am hoping to get back into my weight training by Saturday.

6. Most of my friends say I am crazy for being so into my fitness but I know better. I only have one body and I plan to live as long and as comfortably as I can in it until one day God takes it from me. Some of them get on my case cause I don’t want to go out drinking with him late at night. Me not drinking has made them label me no fun. Others love meeting up with me for lunch and late night hang-outs at Khan where we’re constantly bombarded with mounds of food. But me eating what they would consider a “bird’s meal” has made her to label me no fun. I eat FIVE times a day and so eating as much as they expect me to would make me explode… OK, maybe not explode but definitely leave me feeling super nasty.

7. I was watching Debbie’s videos the other day (she’s the lady with the rockin’ solid body I posted on yesterday’s entry) and so today I took her advice and did a lot of meal prep work. I boiled eggs and chicken, steamed veggies and sweet potatoes, and loaded my fridge with more veggies.

8. Discovered how to make protein ice cream!!! I am a genius… hehehe. Read in Oxygen Fitness magazine the other day about this ice cream recipe that, in reality, isn’t even ice cream but it can fool even the toughest of critics. It required coconut extract but after searching high and low for that in various grocery stores and coming out short, I decided to make it minus the coconut extract.

9. How to make protein ice cream:

1. Mix together a cup of pasteurized egg whites with three scoops of protein shake mix. Honestly, I have no idea what pasteurized means and so I just cracked open a whole whack of eggs, took the yokes out and filled a one cup measuring container (7 eggs). If I had the coconut extract, I would have added 2 teaspoons of it here.
2. Pour the mix into an ice cube dish and freeze for 4 hours.
3. Scoop out the ice cream into a blender and blend it until it’s creamy.
4. Refreeze and then eat.

10. Eating my strawberry protein ice cream hit the spot to a T after two hours of sweating my brains out at boxing! The magazine said there’s about 50 grams of protein per serving and the recipe makes 2 servings but I with the protein powder mix I used, I think there’s more like 60-70 grams of protein per serving, definitely a lot of protein to consume but it was super delicious!
