As the story has it, one day I headed to the opposite side of the globe – the Flipside. I arrived in Korea February 16th, 2005 and thought I’d do a year, then leave. I was wrong. I stayed, launched my first company, Flipside Fitness, and then opened Korea's largest boxing club, Hulk's Boxing (now called Hulk's Club).

After 11.5yrs in Korea, I then picked up one day and returned to Toronto, Canada. But then I left again.

Now I live in the Philippines where I am the CEO and head coach of Empowered Clubhouse, the Philippines' first and only boxing clubhouse exclusively just for women. I also am the founder of the Lil' Sistas Project, CEO and designer of Slay Gear and Baa Baa Black Sheep .Ph.

Cooking Up a Storm

After looking through some of my cookbooks and Pinterest, I decided just to go with what I knew.
No reason to get all fancy and add frills to my chicken or veggies.  I just have to eat more.
And now I'll have to clean more... made such a massive mess in my kitchen, cooking up a storm.
Thankfully I had little helpers who picked up for me if I dropped any.
They didn't exactly know what I was cooking but no worries.  Most people don't know either.
Here are my Eggtastic Egg Muffins and my Full-Meal Chicken Balls.
Both dishes are one dish wonders that have a starchy carb, protein and fibrous carb (veggie).
I also cut up a lot of veggies too.  Can't eat enough greens!
And viola, 8 days worth of clean eating eats all prepared.
It took me about three hours from leaving the club to washing the dishes to do it all.
