As the story has it, one day I headed to the opposite side of the globe – the Flipside. I arrived in Korea February 16th, 2005 and thought I’d do a year, then leave. I was wrong. I stayed, launched my first company, Flipside Fitness, and then opened Korea's largest boxing club, Hulk's Boxing (now called Hulk's Club).

After 11.5yrs in Korea, I then picked up one day and returned to Toronto, Canada. But then I left again.

Now I live in the Philippines where I am the CEO and head coach of Empowered Clubhouse, the Philippines' first and only boxing clubhouse exclusively just for women. I also am the founder of the Lil' Sistas Project, CEO and designer of Slay Gear and Baa Baa Black Sheep .Ph.

Food for Fuel... Monday, February 13

Strange and deranged, this has been the theme of my fight diet.

I’ve already started restricting my water intake for some time now but must admit a midmorning coffee is a much needed beve in my world. Mind ya, drinking it too close to training and, well, I head off to boxing feeling like I’m on some kind of cheap crack – my eyes don’t quite seem in sync with my head and my brain feels rather rattled.

Yesterday I dined out with some of the competitors in the Fat to Phat Challenge my company Flipside Fitness is hosting. We ate at one of my favorite restaurants, a Vietanamese place where I’ve convinced the waitress that I have an allergy to noodles so she loads my dish up with extra veggies. Ok, so I shouldn’t lie, I know, but for the sake of ditching an overdose of starchy carbs and loading up on veggies, come on… hahaha. I had anticipated this being a large meal, anticipated it being my “spike meal”, so with that I returned home after, slept for a couple of hours and then headed out for what was supposed to be a 11km run. Ran 14km in an hour and ten minutes…. sweet!

If I don’t cook food prior to training for when I return to Ggum Guum I ended up resorting to eating solely raw foods. Scrambling eggs is relatively easy but after training I find myself sitting on the floor during my shower and so unmotivated to cook, so down the hatch I chug my eggs raw. Yup, it’s not tasty and my expression on my face is definitely not pretty but it’s a fast meal and of course protein-packed.

These days I crave milk and peppers. Peppers – a veggie that’s naturally very juicy as is healthy – has become my new best friend and I can’t eat enough of them. I found a store on the other side of town that sells not-so-fresh and somewhat damaged peppers. I don’t mind the minor flaws because they’re super cheap compared to the outrageously high prices regular stores slap on them. The other day the seller made fun of me, telling me that he’s never sold so many peppers to one person. He said for $10 he’d let me take as many as I could carry out his shop in my hands – I managed 12.
