As the story has it, one day I headed to the opposite side of the globe – the Flipside. I arrived in Korea February 16th, 2005 and thought I’d do a year, then leave. I was wrong. I stayed, launched my first company, Flipside Fitness, and then opened Korea's largest boxing club, Hulk's Boxing (now called Hulk's Club).

After 11.5yrs in Korea, I then picked up one day and returned to Toronto, Canada. But then I left again.

Now I live in the Philippines where I am the CEO and head coach of Empowered Clubhouse, the Philippines' first and only boxing clubhouse exclusively just for women. I also am the founder of the Lil' Sistas Project, CEO and designer of Slay Gear and Baa Baa Black Sheep .Ph.

Apparently We DO have Menus... Wednesday, November 5

I knew I was in trouble when one of my newest mini Hulkies walked in the club, sat down at the juice bar and blurted out in perfect English "what's the menu for today?"  Ummm... I didn't know we had a daily menu much less an actual cook-on-the-spot menu.  We have a menu at our juice bar but besides the protein smoothies and egg ding-dings, they're all pre-packaged items that are readily available to grab and eat on the spot.  They include things like Lara bars, Raw Rev snack bars, edamames, and protein bars.  With me cooking up a storm yesterday and many Hulkies asking to taste test, a lot of food was passed around the club.  Through in the half box of sweet potatoes we went through also and ya, lots of food!  We also had some drinks left over from the Spooky Movie Night party so those were made available to our Hulkies too.

Tuesday's Menu...
chicken spinach patties
pumpkin pie pudding (with 23 grams of protein it's not your average pudding!!!)
roasted sweet potatoes
Powerade
mango juice

Today's Menu...
roasted sweet potatoes
mixed veggies quiche
whole wheat protein smores
apple juice
mango juice

Thursday's Menu...
tangerines
grilled dried fish
grilled dried squid
egg ding-dings
apple juice
Powerade

Friday's Menu...
tangerines
birthday cake
open-faced egg sandwiches
peanut butter dough balls

One of the things I used to love at my old boxing club was the random food Junior Mint used to save me and send me home with.  I've really tried to carry on this idea at our own club and often we take members out for dinner.  Saturday nights, after Free Train, is when we almost always head out for a weekly dinner with our main sponsor Wow and many times we bring whomever has trained that day.  Part of getting healthier and staying healthy is not only exercising hard but eating clean, and I argue surrounding yourself with positive people.  A lot of the food that gets cooked and passed out to our Hulkies is from our own personal supply of groceries and, in my case, supply of weekly pre-made meals, and so it can get quite expensive.  It's only Wednesday and we've already finished off a $30 box of sweet potatoes and yesterday's chicken spinach patties cost me about $20 in chicken.  It's an expense we have budgeted for and we use our extra points from our Hulk's point system towards, but we often more less than not get caught up in it all and go overboard with the money we put towards food for sharing.

Having said this though, sometimes the food doesn't come from us but instead is generously donated. Sometimes food gets donated by sponsors and the local businesses and shops around us.  Sometimes the food comes from our Hulkies and sometimes it even comes from their parents as in the case with tonight's food.  Tonight, when one mother came to pick up her two children, she presented me with a massive box of tangerines -- 10kgs of tangerines to be exact.  It was such a generous gesture and I really appreciated it because we do try hard to put stress on eating healthy and clean in addition to members training hard.
