As the story has it, one day I headed to the opposite side of the globe – the Flipside. I arrived in Korea February 16th, 2005 and thought I’d do a year, then leave. I was wrong. I stayed, launched my first company, Flipside Fitness, and then opened Korea's largest boxing club, Hulk's Boxing (now called Hulk's Club).

After 11.5yrs in Korea, I then picked up one day and returned to Toronto, Canada. But then I left again.

Now I live in the Philippines where I am the CEO and head coach of Empowered Clubhouse, the Philippines' first and only boxing clubhouse exclusively just for women. I also am the founder of the Lil' Sistas Project, CEO and designer of Slay Gear and Baa Baa Black Sheep .Ph.

Cooking Up Champion Food.. Tuesday, October 13

I cooked up a batch of my notorious chicken and oats for the disbelievers because I argued that they needed to try it before they knocked it.  My chicken and oats are delish but more importantly it's a well balanced meal.  It's got an excellent source of protein, a clean starchy carb, loads of fiber, and a simple carb.  A breakfast like this simply is too good to get all caught up in "funkiness" of it, as one friend noted.  "It's the meal of champions", I say.  

Amy's Chicken and Oats

Ingredients:
1 chicken breast
1 cup of old fashion oatmeal
flavouring of your choice: berries, cinnamon, peanut butter
Directions:
1.  Boil the chicken and then either dice it or grate it.  
It's best to grate it with just a good old cheese grater because what makes this dish odd to the first time taster is the texture.  The finer and smaller you can make the pieces of chicken the more descret the presence of chicken will be in this dish.
2.  Boil your oatmeal like you would usually do when making oatmeal, nothing special.
3.  Add your chicken to your oatmeal, mix in your cinnamon and add flavouring. 
I like to go with berries and cinnamon.  Berries like blueberries and cranberries work very well here because of the strong tartness of their taste that kills the flavouring of the boiled chicken.  Boiled chicken really doesn't have much flavour, it's mainly texture, but berries always add flavouring to a boring bowl of oatmeal and they help with hiding the chicken in this particular dish.
