As the story has it, one day I headed to the opposite side of the globe – the Flipside. I arrived in Korea February 16th, 2005 and thought I’d do a year, then leave. I was wrong. I stayed, launched my first company, Flipside Fitness, and then opened Korea's largest boxing club, Hulk's Boxing (now called Hulk's Club).

After 11.5yrs in Korea, I then picked up one day and returned to Toronto, Canada. But then I left again.

Now I live in the Philippines where I am the CEO and head coach of Empowered Clubhouse, the Philippines' first and only boxing clubhouse exclusively just for women. I also am the founder of the Lil' Sistas Project, CEO and designer of Slay Gear and Baa Baa Black Sheep .Ph.

Planning for Success... Wednesday, February 19

Today's List of Things to Do:
  1. grocery shopping
  2. vaccum and wash the floors
  3. clean up the "coffee shop" room
  4. do a couple of loads of laundry
  5. go jogging at 7:30pm 
  6. catch up on some of my Korean language studies
  7. comb Pyen Chi (more tedious and time consuming than you know it!!!)
  8. prepare this week's worth of meals
... and on that note, I spent got my list of things done and started working on preparing my meals for the week.  Unlike last week, I didn't really get too creative but tried to stay consistent with incorporating veggies into most of my meals I eat at the club.  Among the eight different options I've set out for myself, only one of them doesn't have veggies in it -- the whole wheat toast with fried eggs.  I'm trying to lean away from bread but it's ohhhhh so delish.  My main starchy carb this week is brown rice.  Haven't quite mastered how to cook it quite right but I'm not particular picky with it.  Turns out last week my brown rice wasn't even fully cooked and Snickers teased me so much about eating "chewy" rice.  This week my rice is a bit bunch so I suppose he'll tease me about "crunchy" rice, no worries.

Veggies used:

  • other leafy veggie (that I don't know the name of)

  • rosemary

At home...
MEAL 1:  Protein-packed oatmeal pancake with fruit
MEAL 2:  Fruit and scrambled eggs

At Hulk's...
MEAL 3 and MEAL 5 options:
  1. Chicken Sandwich Guts with rice
  2. Spicy Chicken Bokkeumbap Curry
MEAL 4 and MEAL 6 options:
  1. Celery sticks with Greek yogurt for dipping
  2. Celery sticks lightly lined with homemade peanut butter
  3. Broccolli with hard-boiled eggs
  4. Spinach and fruit smoothie (made fresh)
  5. Whole wheat toast with fried eggs (bi-daily option and made fresh)
  6. If a post-training meal, spinach/banana protein smoothie
